Question about the whole 'minimalist' trend in design

I was at a gallery opening in Chicago last month, and every single piece of branding was super minimalist. I mean, we're talking black and white, one typeface, maybe a single line. Everyone there was raving about how 'clean' and 'timeless' it was. I walked out feeling totally uninspired. For me, graphic design should grab your attention and make you feel something, not just fade into the background. I used to try and make my work that stripped-down because it seemed like the professional thing to do. Now, I'm leaning into more texture, color, and hand-drawn elements. It just connects more with the projects I work on. Has anyone else pushed back against the minimalist default and found their work got better for it?

Isn't the whole point of design to solve a problem for a client? If a clean look works for a coffee shop menu, who cares if it's popular. Maybe the real issue is when designers just copy a style without asking why.
