That neighbor who said my sauerkraut needed more salt drove me nuts
Old Mrs. Patterson kept yelling across the fence that I wasn't using enough salt in my batch last fall. I ignored her for three weeks until the kraut turned into a slimy mess that smelled like a wet sock. Has anyone else had a know-it-all neighbor actually save their ferment?

Salt is the only thing between good kraut and a biology experiment" - yeah, that's basically what my buddy learned the hard way. His neighbor was this old Greek guy who kept yelling at him about his pickled peppers not having enough salt in the brine. My friend got annoyed and left them alone for a month. Came back to jars that looked like a science fair gone wrong. The neighbor finally just took the jars, drained them, added salt, and now those peppers are legendary at their block parties.
