That fermentation station at the farmers market in Austin changed my mind about sauerkraut

I swear I hated sauerkraut my whole life until I tried a sample from this little booth last summer. They had a jalapeno and garlic batch that was crunchy and bright, not that mushy canned stuff. Has anyone else had a fermentation station product that completely flipped what you thought you hated?

My buddy's a chef over in San Antonio, he was raving about their smoked paprika kraut for months before I tried some. He said it's the only store-bought kraut he'll touch. I finally grabbed a jar at a farmers market pop-up, and man, he was right. That smoky flavor cuts through the sourness in a way I didn't expect. It sounds weird but it almost made me think of barbecue in a jar.

That smoky paprika kraut is a game changer for sure. Had a friend who mixed it into bratwurst buns with mustard and it was like the perfect backyard cookout bite. Did you ever try heating it up a little before serving?
