Talked to my grandpa about his sauerkraut method...

He said he never measures salt, just goes by feel and taste... I've been weighing everything down to the gram for 3 batches now. After he showed me his crock that's been going for 40 years without any mold, I started wondering if I'm overthinking this whole thing. Do you guys use exact ratios or just eyeball it?

40 years without any mold" lol that's impressive. I'm pretty sure there's mold in my apartment I haven't even discovered yet, just waiting to pop out. My luck I'd find it the week after I finish a deep clean.
