PSA: I won't give out my sauerkraut method after a friend got sick
A buddy tried my sauerkraut recipe but skipped the salt weight step to cut corners. He ended up with a moldy batch and blamed my instructions. Now I keep my process to myself because sharing risks feel irresponsible if folks won't follow basic safety. It's a tough call between being helpful and knowing when to protect people from their own shortcuts.

Actually, I used to give my pickling tips to anyone who asked. Changed my mind after seeing a coworker try to quick-soak eggs without proper vinegar ratios. They called out sick for two days and I had to cover their shifts. Some steps aren't just suggestions, they're there so you don't poison your friends. If someone ignores the salt weight, that's on them, but getting blamed for their moldy jar is why my recipes stay in my head now.

Ugh... been there with canning recipes. Some people treat safety steps like they're just helpful hints. They don't get that the salt or the vinegar is what stops the bad stuff from growing. It turns a fun project into a real mess fast... and then you're the bad guy. Sorry your buddy blamed you, that's the worst part.
