Wait, are you telling me your whole apartment doesn't have its own microclimates for different ferments? Honestly, I'm team closet 100 percent. My counter gets hit with afternoon sun like a interrogation lamp and my closet stays cool and dark like a cave. Nothing worse than babysitting a jar and watching it bubble too fast or not at all because the temp decided to be dramatic. Ngl, stable and boring is the dream situation, just let it do its thing.

Closet's a safer bet unless your counter has wild temp swings day to day. Stable fermentation beats chasing a number every time.
