Found a weird trick to thicken my hot sauce without cooking it

I left a batch of habanero sauce in the fridge for two weeks and it got way thicker without me doing anything. Turns out the pectin and some natural breakdown just needed time, not heat. Has anyone else noticed their sauces changing texture just from sitting around longer?

Left a jar of salsa in the back of the fridge for a month and it turned into paste.
