I used to microwave everything for dinner now I actually cook in batches on Sundays

Back in January I was still nuking frozen burritos 5 nights a week because I told myself I didn't have time. Then my neighbor at the apartments here in Phoenix asked if I wanted to split a Costco run with her and I ended up with a whole chicken for like 6 bucks. I roasted it that Sunday just to see if I could and had chicken for salads and sandwiches all week. Now I do a 2 hour block every Sunday making rice, chopping veggies, and cooking one protein. Saves me about 40 bucks a week compared to the microwave stuff. Anyone else make the switch from frozen meals to batch cooking and actually stick with it?

Costco chicken is what got me too. I bought one on a whim and ended up pulling the meat off and throwing it in everything for a week. Now I buy two at a time, shred them both, and freeze the meat in bags. Saves my ass on nights when I get home late from work and don't want to think. The frozen burritos were my thing too, but now I make a big pot of chili or soup on Sunday and eat on it until Wednesday. Then I just do sandwiches or leftovers the rest of the week.
