Warning: I was burning my coffee for years with a simple kettle mistake

I always boiled my water in a regular kettle and poured it right over my grounds, which made my pour-over taste bitter. A barista in Denver told me to wait 30 seconds after boiling before pouring, and it made a huge difference. Anyone else have a simple step they were missing that changed their brew?

Switching to a gooseneck kettle for more control was my game changer.

Yeah the "more control" part is what got me. I always thought they were just for looks, like a fancy pour over thing. But I tried one at a friend's house and it's a totally different feel. My old kettle just dumped water out, but with the gooseneck I can actually aim the stream and go slow. It made my morning coffee way better, not gonna lie. I was totally wrong about them.
