That barista who called out my pour-over technique...
I was at a little shop in Austin last Tuesday, and this barista watched me order a pour-over. She asked if I wanted to watch her make it, and I said sure. Halfway through, she pointed out I was pouring too fast and showed me the difference with a slow spiral. It totally changed how my coffee tastes at home now... has anyone else had a barista just casually fix your whole routine?

And yeah, that slow spiral thing is the real deal. I used to just dump hot water on my grounds and hope for the best. Now I take a good three minutes to pour, real slow circles from the center out. Makes the coffee way less bitter. Never looked back after that tip.

Yeah, "dump hot water and hope for the best" was basically my morning routine for way too long. I used to think people who did the slow pour thing were just being extra, like wearing a fancy apron just to boil an egg. But I tried it one weekend when I was bored and holy crap, it really does make a difference. The bitterness just disappears and you get this smooth, even taste instead. I honestly didn't believe it until I did it side by side with my usual slam and dash method. Now I'm one of those people. Can't even judge them anymore.
