Saw a barista in Portland pull shots with a tiny hand grinder

Watched a guy in a PDX shop use a $60 hand grinder for espressos, pulled way better than my $800 machine, anyone know why cheap grinders sometimes beat expensive ones?

Respect the Portland guy's skill but cheap hand grinders usually just don't have the burr alignment or consistency for good espresso. Your machine probably just needs a better grinder, not a whole new setup.

100 dollar hand grinder says hold my beer but then immediately drops it.
