Overheard a barista rant about pour-over technique and it hit home

I was at a shop in Austin last week getting a drip coffee and this barista was telling a customer that most home brewers use water thats way too hot. She said if you see bubbles instantly when water hits the grounds, you are scorching it. Totally made me rethink my morning routine since I always just use boiling water straight from the kettle. Anyone else been doing this wrong for years?

Came to terms with this last year when I realized I'd been basically boiling my coffee beans alive every morning... guess we're both on the apology tour now.
