My coffee kept coming out sour until I lowered the water temperature. Problem solved!

Works for lighter roasts too.

Oh totally! I was just reading about this in a coffee group last week. Someone was saying they get way MORE of those fruity notes from light roasts with a slightly finer grind and a longer bloom time. They used an Ethiopian bean as an example, said it brought out a crazy strong blueberry taste they never got before. It changed my whole method for my morning cup.
