Just realized I was using way too much coffee per cup for 2 years

Was talking to the owner of a small roastery in Omaha last Friday and he asked me how many grams I use for a 12 oz mug. I said 30. He laughed and said try 20 max. I thought more coffee = stronger flavor but he explained overextraction makes it bitter and muddy. I tried his method the next morning with my usual medium roast and it honestly tasted cleaner and sweeter. Has anyone else been overdoing their coffee ratio without realizing?

Oh man, 30 grams for a 12 oz mug is wild (but I get it, you want it strong). The overextraction thing is a total game changer once you try it, right? It's like you get all the good flavors without that harsh bite.

Gotta say @miaa41, the overextraction thing also changes how you treat your water temp. I found that grinding a bit finer and dropping the temp to like 195-200 degrees lets you push that 30 grams without getting any of that bitter stuff you mentioned. It's like you can go high dose and still keep it smooth if you play with the heat a little. Never see people talk about that balance much, but it's been a game changer for my morning cup for sure.
