I was dead set against flavored syrups until I tried a lavender one at a shop in Portland last summer.
The barista handed me a sample without telling me what it was and I genuinely thought it was some kind of fancy tea blend, now I keep a bottle at home for weekends but still won't touch vanilla or hazelnut.

Got a little bottle of rose syrup from a trip and now I'm obsessed with putting it in my iced coffee on hot days. It's funny how one specific flavor can totally change your mind. I used to only drink plain black coffee, but now I'll try any floral or fruit syrup if it sounds interesting, just not the basic ones like caramel or pumpkin spice. Have you experimented with any other unexpected flavors since that lavender one?

Rose syrup in coffee sounds good but have you tried orange blossom water yet? That stuff is basically magic in cold brew, way more interesting than caramel or pumpkin. I went through a whole phase where I was putting cardamom and cinnamon in my pour over after trying some Turkish coffee. It's wild how a tiny change like that makes you never want plain black coffee again.
