I stopped rinsing my filter with tap water and my $18 kettle finally made sense
So I have been brewing pour over for about 8 months now and always thought my coffee tasted a little flat or papery no matter what beans I grabbed from the shop down on 5th street. Two weeks ago my neighbor who runs a tiny roastery out of his garage watched me make a cup and just said 'you're rinsing that filter with the same tap water you won't even drink plain.' I honestly never connected it. Our tap water here in Dayton is super hard and I had been pre wetting the filter with it and also filling my kettle with it, so basically I was dumping minerals and chlorine straight into the brew before the coffee even hit. I switched to the filtered water from the jug in my fridge for both rinsing and brewing and the same bag of beans I almost tossed suddenly tasted sweet and fruity instead of dull. It sounds so obvious writing it out but I spent months blaming my grind size and my pour speed when it was the water the entire time. Curious if anyone else had a dumb simple fix like this that made a bigger difference than any gear upgrade.
