I put my grinder in the freezer for a week and now I'm not sure what to think
Everyone in every coffee group I follow says keep your beans at room temp, sealed, away from light and heat, end of story. Fine, I believed that too for about 6 years. But last month my kitchen in Phoenix hit 94 degrees inside during a bad AC stretch, and I panicked, so I threw my whole grinder and bean bag into the freezer just to buy time. The first few days the shots were a mess, cold beans crack into a million pieces and my grind went sideways. So I started letting the beans sit out 15 minutes before grinding, and around day 5 something clicked, the same beans I'd been fighting all month suddenly pulled sweeter and way more even. I went through 2 pounds testing this and I honestly can't tell if it's the freezer, the rest time, or me just getting lucky with a good batch. I know this goes against everything people say, but I'm not ready to dismiss it either, guess I'm the weirdo with frozen coffee now. Has anyone else messed with cold beans, or am I just chasing noise here?
