Cold brew ratio flip took a week to click

I always used the standard 1:8 ratio for cold brew and it came out fine, but never great. Last month I tried 1:5 with a 16 hour steep and the difference was huge. Stronger, sweeter, and no bitter edge at all. The only catch is I had to cut the concentrate with water or milk when drinking, but that's easy. Does anyone else tweak ratios based on the bean origin or roast level, or is 1:8 still the default for most folks?

Honestly, the "no bitter edge at all" part is what makes me raise an eyebrow, because I've done 1:5 steeps and still gotten some bite depending on the beans. Tbh, a lot of that sweetness might just be the dilution fooling your tastebuds, not some magic ratio unlock. It's coffee, not rocket science, so if 1:8 works for most people, maybe it's fine to stop chasing perfection.
