The week I fed 4 people on $31 and my roommate asked if we were eating fancy now
So last month my roommate got laid off and we had $31 left in the grocery envelope for a whole week, 4 people eating dinner at our place every night. I went to the Aldi on Main and got a 5 lb bag of potatoes, dried pinto beans, a big tub of oats, eggs, a cabbage, onions, and a pack of chicken thighs on markdown for $4.79. Monday was bean soup with the ham bone I had frozen from Easter, and I stretched that pot for two dinners over rice. Wednesday I did a sheet pan of chicken thighs with cabbage and potatoes and everyone went quiet at the table, which never happens. Friday was breakfast for dinner, eggs and potato hash with onions, and my roommate's girlfriend brought a loaf of bread she baked. Saturday I made a big pot of oats with cinnamon and brown sugar and we ate it like dessert watching a movie. Total came to $29.14, and I still had the cabbage core and a few eggs left over. Sunday my roommate looked at the pot on the stove and asked if we were eating fancy now, and I just laughed. Has anyone else had a week where being broke forced you to cook better than you normally do?
