The $8 rotisserie chicken at Costco changed how I feed myself for the week
Honestly I used to think grabbing a whole cooked chicken was kinda lazy cooking, but last month I was at the Costco on the north side and saw a guy load 3 of them into his cart, so I asked him what he does with them. He told me he strips the meat off one for tacos, throws the bones and skin in a pot with veggie scraps for stock, and uses the rest for sandwiches all week. I tried it and one $8 bird got me 4 dinners plus a big pot of soup I froze in quart bags. Tbh the meat is a little salty on its own but once you sauce it up it does not matter. Has anyone else stretched a store bought bird this far or am I late to this?
