Showerthought: After a week of eating nothing but beans and rice, my grocery bill dropped to $23

Last Tuesday I realized I actually felt better and had more energy than when I was buying all those pre-made meals and fancy snacks, so has anyone else noticed their body just gets used to a really simple diet after a few days?

Read something recently about how our gut bacteria actually shift to digest whatever we eat regularly, so after a few days of rice and beans your system just optimizes for breaking that down efficiently. It kind of makes sense why those first days are rough (your body is basically throwing a tantrum for the old stuff) but then you level out. Definitely noticed the same thing with meal prepping, once you push through the initial grumpiness your energy stays pretty steady all day.

Oh yeah totally, that initial adjustment is no joke lol but worth it once you get past it.
