Ngl I thought meal prepping was overhyped until I actually did it right
Honestly I rolled my eyes at all those influencers showing off their matching glass containers and perfectly portioned chicken and rice. I tried it once years ago and ended up throwing out sad broccoli on day 3 so I wrote it off as a scam. But then I lost my job back in March and had to stretch $60 for two weeks of food. I forced myself to try again but this time I went simple: one big batch of lentil soup, some roasted sweet potatoes, and a bag of frozen mixed veggies. No fancy recipes just cheap staples. The first day I ate the soup for lunch I was actually shocked at how good it tasted after sitting overnight. By day 4 I wasn't sick of it yet because I swapped out toppings like hot sauce or a spoonful of Greek yogurt. Those two weeks I only spent $45 on food total and I wasn't hungry once. Has anyone else found that simple meals work way better for prepping than those complicated blog recipes?

Seems like a lot of work for soup and sweet potatoes.

Start roasting everything in a dry pan first. Get some color on those sweet potatoes and the aromatics before you dump liquid in. I keep the peel on for texture and it saves so much prep time. Use an immersion blender right in the pot too, no need to mess with transferring batches to a blender. Batch cook on sunday and portion it out, the flavor actually gets better after a day in the fridge.
