I finally tried that 'one pot pasta' thing from a blog called Budget Bytes

I was sure it would just be a soggy mess, but I made the lemon pepper chicken version with a $3 pack of thighs. It came out perfect in about 25 minutes and used just one pan, which saved on cleanup (and water, I guess). Has anyone else tried a one pot recipe that actually worked and didn't taste bland?

Glad it worked for you, but calling it one pot is a bit of a stretch. You still need a separate pan to cook the chicken first, right? The real one pot recipes are where you don't brown anything ahead of time. You just dump all the raw ingredients in together. The best one I've tried is a sausage and kale pasta where the pasta cooks right in the broth. It sounds wrong but the starch from the pasta makes its own sauce.

That Budget Bytes recipe does have you brown the chicken first, but that's what makes it work. You get that good flavor from the fond in the pan before adding the liquid. A true dump-and-go recipe like the sausage one you mentioned always leaves the meat tasting boiled and bland to me. The extra pan is worth it for a better meal.
