Unpopular opinion: I ruined a whole pork butt by trusting the dial on my old smoker instead of my own eyes
Back in 2019 I was cooking for my brother's backyard wedding in Tulsa, about 40 people, and I had two pork butts going on my old offset. The dial thermometer on the lid said 225 the whole time, so I felt great. At hour 7 I opened it up to wrap and the meat was grey and tight, way behind where it should be. Turns out the dial was off by almost 60 degrees and I'd been cooking at like 170 the whole afternoon. I had no backup probe, so I ran to a hardware store 15 minutes away and grabbed a cheap digital one, then cranked the fire and wrapped everything in foil with a splash of apple juice. The butts came off at 9 that night instead of 5, and folks ate late, but nobody complained once they tasted it. Now I keep two probes in the drawer at all times.
