Unpopular opinion: I heard a guy at a comp say 'bark is just burnt seasoning' and it made me stop

He was talking about a brisket he judged that had a thick crust but zero flavor underneath. Has anyone else seen a pitmaster focus too much on looks over taste?

That's honestly so frustrating. All that work for a pretty crust that doesn't taste like anything. Happens way too often, doesn't it?
