Took me 5 years to figure out I was trimming brisket wrong

Honestly, I always cut against the grain but I was slicing at the wrong angle the whole time, leaving tough chunks. A buddy watched me do it at a cookout in Austin and just laughed, then showed me how to find the grain shift mid-brisket. Anyone else have that moment where you realized you'd been messing up a basic move for years?

Wait, are you telling me I spent five years cutting my brisket like a total idiot too? I thought I was being smart slicing thin against the grain until my uncle pointed out I was basically sawing through the fat cap sideways and leaving half the meat in jagged chunks. The first time someone showed me the grain shift I felt like an actual fool, like watching a magic trick where you don't see the switch. I still get embarrassed thinking about all those dry, chewy slices I served at family dinners thinking I was some pitmaster. Honestly it's a miracle anyone ate my barbecue without complaint, they must have been real polite or just hungry enough to deal with it.
