TIL wrapping brisket in butcher paper vs foil is a real debate... I was a foil guy until last month
I always thought foil was fine for the stall, but after trying butcher paper on a 14-pound packer from Costco, the bark came out way crunchier and the smoke ring was deeper. Am I missing something or is paper just better for moisture control? What's your go-to?

Man foil just traps too much steam, paper lets it breathe like anything else in life.

My 2005 Honda Civic's alternator went out three times before I learned the difference. The first two times I wrapped it in foil to keep it dry and it just cooked itself. Third time I used a paper bag with some holes poked in it and that thing ran for another 40,000 miles. Paper lets moisture escape without letting road grit in. Foil turns your alternator into a steam oven.
