TIL soaking wood chips before smoking is a waste of time
After 3 years of soaking applewood chips in water before every pork butt cook, I tried them dry one day when I forgot to soak them and the smoke ring was actually better, so do I need to throw out everything I thought I knew about BBQ or is it just me?

Oh man, the "rules are BS" rabbit hole just keeps getting deeper (and I'm the one falling into it headfirst). I was that guy soaking mesquite chips for two hours before every chicken cook because my grandpa swore by it, and yeah, dry chips changed my whole BBQ game too. But here's the real punchline: I still catch myself watching the water pan religiously like it's some kind of BBQ security blanket. So guess I'll just keep questioning everything I learned from that one YouTube video from 2016 and hope my ribs don't turn into hockey pucks in the process.

Wait, youre telling me I've been wasting my time for the last 5 years soaking hickory chips for brisket? I forgot to soak mine once too and got the best smoke flavor Ive ever had, like the wood actually burned right instead of just steaming. Now I just throw dry chips straight into my smoker box and the bark comes out way darker and crunchier. Makes me wonder what other BBQ "rules" are total BS.
