Talked to a guy at Franklin's last weekend who said brisket is ruined if you freeze it even once
He told me after 8 years of running a competition team he throws out any brisket that's been frozen and now I'm second guessing my whole process of buying packs on sale and storing them for months, anyone else ever test this side by side?

I had a buddy who actually tested this with three briskets from the same packer once. He froze one, kept one fresh, and the third he dry brined then froze. None of us could tell the difference after they were smoked. I think that guy is probably way too picky or maybe he's had bad luck with freezer burn. I freeze mine all the time and they come out just fine as long as you wrap them tight.
