Shoutout to Franklin Barbecue for showing me what patience looks like
I finally made it down to Austin last weekend and stood in line at Franklin for 2 hours. Tbh I thought it was just hype but that brisket literally fell apart from the smoke ring alone. The way they manage that line and keep the meat consistent is wild, has anyone else been blown away by a pitmaster's setup like that?

I hear you on the smoke ring but 2 hours for brisket is a lot. I've had barbecue from places like Snow's in Lexington and La Barbecue in Austin where the meat was just as tender and the wait was half that. The line management at Franklin is impressive, sure, but I'd rather spend that extra hour eating somewhere else.

Oh man, you've got me thinking about my buddy Dave. He swore up and down that Franklin was overrated until his girlfriend dragged him there last spring. They waited a full two and a half hours, and he said by the time they got their food he was hangry and ready to hate everything. But then he took one bite of that brisket and apparently just sat there silent for a minute. He told me later it was the most annoying thing ever because he had to admit the wait was actually worth it. Have you ever had a meal that totally changed your mind about a place?
