Offset vs pellet smoker side by side test at my buddy's place in Austin
My friend Greg and I ran a brisket comparison last weekend. He used his Lang offset and I ran my Traeger. We used the same prime brisket from HEB and same rub. The offset bark was way better, deeper color and crunchier. Has anyone else found that offsets just give better smoke flavor no matter what you do?

The offset is just a different beast. It's like how a cast iron skillet will always sear better than a nonstick pan. Some tools do one thing great, others try to do everything okay. That's just how it works in my kitchen and my driveway.

My Weber kettle has been parked in the same spot for going on 8 years now and I've never once felt like I was missing out. I guess some people really get into the weeds with offsets and charcoal baskets, but for a backyard cookout where I'm just trying to get burgers on the table, it does the job just fine. Maybe I'm just not picky enough to care that much about the difference.
