I finally gave in and tried a pellet smoker after years of using only stick burners. For about 6 years I was straight stick burner only. Offset smoker, real wood, tending the fire every 45 minutes. Thought pellet grills were just for people who wanted easy mode without real smoke flavor. Then my buddy let me borrow his Traeger for a brisket cook last month in Atlanta. I ran it at 225 for 14 hours overnight. Woke up to a steady temp and a nice smoke ring on the meat. The bark wasn't as dark as my offset but the flavor was way closer than I expected. Now I'm thinking about getting a Camp Chef or something similar for weekday cooks. Anyone else make the switch from offsets to pellets and regret it or stick with it?

Honestly I went the other way started on pellets and switched to a kamado so you've got my respect for tackling stick burners. Ngl the best part of pellets for me was sleeping through the night without worrying about the fire dying.
