Hit 500 briskets this weekend on my offset and it messed with my head
I've been tracking every cook for the last 3 years in a little notebook. This past Saturday I pulled a 14 pound prime packer off the smoker and realized it was my 500th brisket. That number just sat there for a minute. I remember my first one back in 2021, it came out like shoe leather and I almost quit right then. Now I can feel where the stall is gonna hit just by how the bark looks at hour 4. Dropped 3 grand on wood alone over that stretch too. It's weird hitting a milestone nobody else sees but you. Anyone else keep count of their cooks and get caught off guard by the total?

Dropped a whole pork shoulder on the patio once and still served it.

500 briskets? Bro I've lost count of how many pork butts I've sent to the graveyard but my notebook would probably read more like a tragedy than a milestone lol. I think I hit like 200 butts last year and still manage to screw up the occasional one bad enough my dog won't even look at it. At least you didn't set your smoker on fire like I did on number 87 - that was a real confidence builder.
