Had an old pitmaster show me his pork butt method yesterday

I was at a comp in Kansas City last weekend and this guy in his 70s let me watch his whole setup. He uses a cheap offset smoker with a foil pan water setup, nothing fancy. Anyone else ever had a veteran pitmaster change how you think about the basics?
