Did my 200th rack of spares on the Old Country offset last Friday and it snuck up on me
Started keeping a notebook back in 2019 after I messed up a brisket for my brother's wedding in Texarkana, and flipping to the last page Friday night I counted 200 racks of spares since then. What got me is how many of those came in the last 18 months, feels like I got worse at counting and better at reading the pit at the same time. My first 20 racks I was fighting temp swings every 15 minutes, now I can run the whole cook off the smell and the color of the smoke coming out the stack. Anybody else keep a log like this and see a number that surprises them?
Wait, you went from temp swings every 15 minutes to running it off smell in just the first 20 racks? That seems fast to me. I've done probably 60 or 70 racks on my offset and I still check the thermometer way more than I should, maybe every 30 minutes or so. The smell thing took me a lot longer to trust, and even now I'll second guess myself when the wind picks up. Not saying you're wrong, just that the jump from fighting temps to reading smoke that quick is pretty dang impressive for a backyard guy.
