Tried fermenting a batch of carrots with dill from my garden and they turned out way too fizzy

Honestly my last batch of fermented radishes got so fizzy they practically hissed at me when I opened the jar. Tasted like a weird, spicy soda that had gone to war. Pretty sure I just let them sit on the counter for a day or two too long. Ngl, it was a bit of a science experiment gone wrong.

Oh man, that fizz is actually a good sign! It means your ferment was super active. The weird taste was probably from leaving it out too long after it was done. Once it tastes right, you gotta pop it in the fridge to slow everything down. Otherwise it keeps fermenting and gets that funky, sour war vibe you described.
