Threw out 3 failed ferments this morning before hitting jar #50

I've been tracking my ferments for the last 2 years and I just logged my 50th successful batch. But man, I forgot about the 3 I had to toss this morning because of mold on my carrot sticks. I used a new jar from Target and I think the seal was bad. Anyone else keep a running count and get surprised by the losses piling up?

The seal might not be the real issue. Carrot ferments need a good brine ratio or they get moldy fast.

Yeah, @stellacooper is right on the money here. I've lost a whole batch of carrots to mold because I got lazy with the salt. You need a solid 2% brine by weight of water and veg combined, or it's just asking for trouble. I weigh everything on a kitchen scale now, no eyeballing it. Also, keep the carrots fully submerged with a weight, not just pushing them down. If any bits float up to the surface, they'll turn fuzzy green almost overnight.
