PSA: Stop babysitting your sauerkraut with daily burping
I used to burp my kraut jars every single day like some nervous parent. Got tired of it after a batch went moldy from too much air getting in. Switched to an airlock lid setup from a homebrew shop for $12 and haven't had a bad batch since. Anyone else make the switch or still doing the daily open and sniff routine?

I read somewhere that all that daily burping is actually counterproductive because it lets oxygen in and that's what causes kahm yeast and mold issues in the first place. The whole point of fermentation is to create an anaerobic environment, and every time you pop that lid you're basically inviting trouble. I switched to those silicone nipple lids a while back and they work fine, though I still have one batch going with the old fashioned method just to compare. Honestly, once you stop obsessing over it, the kraut seems to turn out better anyway.
