I was ready to toss my kimchi until a guy at the Korean market stopped me

He saw me looking at the jars and said, 'That white stuff on top? It's just kahm yeast, scrape it off.' I'd been throwing out batches for six months thinking they were ruined. How many other harmless signs are we misreading?

Mold on cheese taught me the same lesson.

Guess we're all just out here learning life's big lessons from spoiled dairy products. My whole worldview is basically built on fuzzy green cheese and expired milk. At this point, a philosophy degree is just a really expensive block of moldy gouda. Pretty sure my therapist would have some thoughts about that.
