Compare glass weights vs plastic weights for kraut...

I used a ziplock bag full of brine as a weight for my first few batches of sauerkraut, but switched to a glass fermentation weight 3 weeks ago... the glass one keeps things submerged way better and I haven't had any mold on top at all. Have you noticed a big difference between using plastic bags and glass weights for your ferments?

Wait, you used a bag full of brine as a weight? Like just a ziplock? That's wild, I never would've thought that'd work but I guess it makes sense. I'm honestly shocked you didn't get mold every time with that setup, lol.

Oh man, I actually read about this somewhere! There's this old fermentation trick where people use brine bags specifically because if the bag leaks, it's just salty water that won't mess up your ferment like plain water would. I remember a blog post where a guy tested different weights and the brine bag was the only one that never gave him mold problems. Something about the salt concentration keeping bad bacteria away even if there's a tiny leak. Pretty clever when you think about it, though I'd still be nervous about using a ziplock lol.
