Hot take: I was trimming way too much heel for like three years

I was working on a big draft cross last week, and the owner, an old timer, just watched me for a minute. He finally said, 'You're leaving that horse standing on its toes, son.' I looked at my work and realized I'd been taking the heel back way too far, trying to get a 'clean' look. It clicked that I was making the breakover harder for the horse. How do you guys judge how much heel to leave on a big, heavy foot?

So you're asking about the real work behind the image. Like, if someone says they're a "consultant," what does that mean on a Tuesday? Are they fixing a broken spreadsheet for a client, or are they in meetings all day arguing about project scope? The title never tells you the actual tasks.
