Taping vs. Pre-fill on butt joints, which way do you lean?

Honestly, I used to always pre-fill butt joints with hot mud before taping, but last week on a ceiling job in Reno I just taped straight over with all-purpose and the finish came out way flatter. Now I'm second-guessing my whole process. Is pre-filling just a waste of time or am I getting lucky with the weather out there?
