I used to think patching a ceiling was just about slapping some compound on and calling it a day. If the original stain or water damage is still there, the patch will just keep coming back no matter how good the mud job looks. You have to kill the mold or seal the stain first with something like a shellac-based primer, then use mesh tape not paper tape, and give each layer plenty of time to dry. In a humid place like Tucson, stuff dries fast but not always evenly, so you really need to wait. I'd say sand it smooth between coats too, otherwise the new patch will crack right along the old lines.
