Warning: Those instant mashed potato packets from Dollar Tree actually work better as a thickener for soups than the expensive cornstarch I used to buy.

I dumped a $1.25 packet into my bean soup last night after realizing my usual roux trick was a no-go, and it held up 10 times better without getting that weird slimy texture - has anyone else found a weird dollar store hack for classic cooking staples?
