Found a hack for dollar store tortilla pizzas that actually work...

I kept trying to make pizza with those cheap dollar store tortillas and they always turned into a soggy mess. Last Tuesday I tried something different because I was sick of wasting food. I microwaved the tortilla for 30 seconds first to dry it out a bit, then I put it in a dry pan on medium heat for about 2 minutes per side until it started getting little brown spots. After that I added my sauce, cheese, and toppings and baked it at 375 for 8 minutes. The crust actually held up and got crispy around the edges, like a real thin crust pizza. I used the El Milagro tortillas from my local Dollar Tree in Houston. Has anyone else found a trick for keeping dollar store tortillas from going soggy?

Three years ago I started preheating my cast iron pan before putting anything in it, and it changed how I cook cheap ingredients. It is the same basic principle as what you did with the tortilla - you remove moisture before adding the wet stuff. Most kitchen failures come from not understanding that water is the enemy of crispiness, whether it is a tortilla or a burger patty.

Three years ago? That's wild, I feel like I just figured out preheating my pan last week and I've been cooking for ages. @oliviapatel, you're spot on about water being the enemy though, I ruined so many burgers by flipping them too early and losing all the crust. Now I just let my cast iron get screaming hot before anything touches it, makes cheap beef taste way better.
