Drywall mud keeps cracking? Check your bucket's born-on date

Pulled a 3 year old bucket of joint compound out of my shed last weekend and patched a hole in my hallway. Looked fine on top but after it dried, big cracks everywhere. Turns out old mud loses its binders and no amount of mixing fixes it. Checked the label and yeah, born-on date was way past. Now I write the date on the lid with a sharpie when I open it. Has anyone else dealt with mystery cracks from old mud, or is it just me?
