Old timer at the concrete yard taught me a lesson about water curing

I was at the Cemex yard in St. Louis last Tuesday picking up a load for a driveway pour. This old finisher named Gary walked up and told me I was ruining my slabs by not keeping them wet long enough. He showed me his trick of laying down wet burlap and covering it with plastic for a full 7 days, not just the 3 I was doing. Has anyone else had an old pro change how you handle curing?

Honestly, did he say why the full 7 days matters more than the 3 you were doing? Like, what's actually happening to the concrete in those extra days?
