Tried a $12 grocery store knife after 10 years using high-end ones...

Last week my fancy Wusthof broke mid-shift at the diner. I grabbed a cheap Santoku from the corner market for 12 bucks just to finish service. Honestly? That plastic-handled knife held its edge for 4 straight days on carrots and onions. I was SHOCKED. It even handled slicing tomatoes better than my old blade. Now I'm wondering if I've been overthinking gear for a decade. Has anyone else found a random cheap knife that actually worked well?

Gotta disagree a bit here lol. A 12 dollar knife holding an edge for 4 days is definitely impressive but that plastic handle is gonna get slippery as hell the second any oil or moisture gets on it. I bought a cheapo years ago that was great for like 2 weeks then it chipped bad on a bell pepper core of all things. The steel in budget blades is usually super soft or super brittle, no in between. Maybe you got a lucky one from a good batch but that Wusthof probably just needed a proper sharpening after 10 years of use.
