The night I dropped a whole tray of 40 lamb chops during service

Honestly, I was working the grill at a busy spot in Austin last summer, and we had this huge reservation for 30 people. I had just finished seasoning 40 lamb chops and was carrying the tray to the grill when my towel slipped on the handle. The whole thing crashed to the floor, chops everywhere, grease splattered on my shoes. I stood there for like 2 seconds panicking, then grabbed a clean towel and yelled at the line cook to fire up the backup grill. We had to pull 20 frozen chops from the walk-in, defrost them under cold water, and I worked like a machine to get them out in 20 minutes. The table was patient, but my chef still gave me that look. Has anyone else had a moment where you just had to push through and fix a dumb mistake on the fly?

Did you get any grease on your shoes that stained them forever? I mean, that sounds like such a nightmare but honestly, you saved it in 20 minutes which is pretty impressive. Sometimes those push-through moments make the best stories after the shift is over.

Push through moments usually end up as stories nobody wants to relive, and grease stains are the ones that never wash out. You're being too generous - saving it fast doesn't make the cleanup any less of a hassle later.
