The head chef's note on my prep sheet about dicing onions changed everything
He wrote 'stop crying' in red pen. I was cutting root-to-stem that whole time. Now I leave the root end intact and it's night and day. Anyone else get a tiny tip that saved them hours of burning eyes?

Oh man, that root-to-stem thing is brutal. Glad you figured out the trick, it really does make a difference.

Damn, root to stem is rough. I tried that once and my eyes were burning so bad I had to step outside for ten minutes. How long were you doing it before the chef called you out? Did you just never question why every onion prep session was hell?
